Feel free to switch out the oil for applesauce if you’re after a lighter touch, or use a gluten-free flour blend to accommodate dietary needs. If nuts aren’t your thing, simply omit the walnuts or replace them with sunflower seeds for a nut-free option. Always remember to check labels for allergies, especially with canned goods like pineapple.

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups sugar
  • 1 1/2 cups oil
  • 4 eggs
  • 2 cups carrots
  • 1 (8 1/2 ounce) can pineapple
  • 1/4 cup walnuts
  • 1 -3 ounce cream cheese
  • 1 1/4 cups powdered sugar
  • 1/2 cup margarine
  • 1/8 cup pineapple
  • 1/4 cup walnuts

Instructions

  1. Drain the crushed pineapple from the can and set aside 1/8 cup for frosting. Chop the walnuts and set aside. Grate the carrots until you have 2 cups.
  2. In a large bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon to ensure an even mix.
  3. Add in the sugar, 1 1/2 cups oil, and 4 eggs to the dry ingredients. Mix well until smooth.
  4. Stir in the grated carrots, the drained pineapple (remember to hold back 1/8 cup for the frosting), and 1/4 cup walnuts.
  5. Pour the batter into a greased and floured 9 x 13 inch pan, spreading it evenly.
  6. Bake in a preheated oven at 350°F for about 35 minutes to 1 hour, or until the top springs back when lightly touched.
  7. Allow the cake to cool completely in the pan on a wire rack.
  8. While the cake cools, prepare the frosting by mixing together 3 ounces of cream cheese, 1 1/4 cups powdered sugar, and 1/2 cup margarine until fluffy.
  9. Fold in the reserved pineapple and chopped walnuts into the frosting mixture and combine well.
  10. Once the cake is cool, apply the frosting generously on top. Serve and enjoy every bite.
