When it comes to the ingredients, the ground almonds provide a nutty flavor that you won’t want to skip. If someone has a nut allergy, consider using sunflower seed flour as an alternative, but keep in mind it won’t taste quite the same. Also, make sure your powdered sugar and margarine or butter are of good quality for the best results. For the crescent rolls, any brand will do, but I tend to lean towards the classic ones for that perfect flaky texture.

Ingredients

  • 1 cup ground almonds
  • 1/2 cup powdered sugar
  • 1 egg white
  • 1/2 teaspoon almond extract
  • 2 (8 ounce) cans pillsbury refrigerated crescent dinner rolls
  • 2 tablespoons margarine or 2 tablespoons butter, softened
  • 1 egg white, slightly beaten
  • 1 teaspoon water
  • 1/4 cup sliced almonds
  • 1/2 cup powdered sugar
  • 1 tablespoon margarine or 1 tablespoon butter, softened
  • 1/2 teaspoon almond extract
  • 2 -3 teaspoons milk

Instructions

  1. Preheat your oven to 375 degrees F.
  2. Lightly grease 2 cookie sheets to ensure the croissants don’t stick.
  3. In a small bowl, combine 1 cup ground almonds, 1/2 cup powdered sugar, 1 egg white, and 1/2 teaspoon almond extract. Stir until well mixed.
  4. Separate the dough into 16 triangles. Spread a scant 1/2 teaspoon of margarine over each triangle, leaving about 1/2 inch from the edges.
  5. Spread approximately 2 teaspoons of the almond mixture over the margarine on each triangle.
  6. Roll up the dough starting at the shortest side of the triangle and rolling towards the opposite point to form a crescent shape.
  7. Place the rolls point side down on the prepared cookie sheets, and curve each roll slightly to enhance their crescent shape.
  8. In a small bowl, combine the remaining egg white with 1 teaspoon water and brush the mixture over the top of the rolls.
  9. Sprinkle sliced almonds on top of the rolls for that lovely crunch.
  10. Bake in the preheated oven for 10 to 15 minutes, or until they are a beautiful golden brown.
  11. While the croissants are baking, blend 1/2 cup powdered sugar, 1 tablespoon margarine or butter, 1/2 teaspoon almond extract, and 2 to 3 teaspoons milk in a small bowl until smooth to create a glaze.
  12. Once the croissants are out of the oven and slightly cooled, drizzle the glaze over the warm rolls.
