For those wishing to customize their Apple Bread Pudding, feel free to swap out the margarine for butter if you prefer that rich flavor. If apples aren’t your favorite, pears or peaches could also work, and a bit of nutmeg can add a unique twist. Just remember, using fresh ingredients tends to yield a more flavorful pudding, so keep that in mind when choosing your apples and bread.

Serving Size1 (203 g)

Ingredients

  • 2 tablespoons margarine
  • 8 -9 slices bread
  • 2 cups sliced apples
  • 1/4 cup raisins
  • 2 teaspoons cinnamon
  • 1 cup light cream
  • 1/2 cup milk
  • 1/2 cup sugar
  • 5 eggs, beaten
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice

Instructions

  1. Spread 2 tablespoons margarine on the bottom and sides of an 8-cup casserole dish.
  2. Remove the crusts from 8-9 slices of bread, toast them lightly, and then arrange the slices on the bottom and sides of the dish.
  3. In a bowl, combine 2 cups sliced apples, 1/4 cup raisins, and 2 teaspoons cinnamon, and give it a good stir.
  4. In a pan, mix 1 cup light cream, 1/2 cup milk, and 1/2 cup sugar. Heat it until it reaches a boil, then gradually pour it into the 5 beaten eggs, stirring constantly to avoid scrambling the eggs.
  5. Add 1 teaspoon vanilla and 1 tablespoon lemon juice to the egg mixture and stir until everything is well combined.
  6. Pour the egg mixture over the bread in the dish, making sure to cover it completely.
  7. Top with the remaining bread slices to create a nice barrier.
  8. Place the casserole dish in a larger pan filled with hot water, about 3 inches deep, to create a water bath that helps the pudding cook evenly.
  9. Bake in a preheated oven at 400°F for about 1 hour, or until the top is golden and the pudding is set.
  10. Once baked, cool for 2 hours before serving to allow the flavors to meld beautifully.
