When it comes to ingredients, feel free to substitute the ground almonds with another nut or even flour if allergies are a concern. For a dairy-free option, try using a plant-based cream cheese. Fresh apples are ideal, but you could also use canned or frozen apples in a pinch, just be sure to drain excess liquid if using canned.

Ingredients

  • 1 cup flour
  • 1/2 cup ground almonds
  • 1/4 cup sugar
  • 1/2 cup cold butter
  • 1/4 teaspoon almond extract
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup sugar
  • 1/4 teaspoon cream of tartar
  • 1 egg
  • 1/3 cup brown sugar
  • 1 tablespoon flour
  • 1 teaspoon cinnamon
  • 4 cups thinly sliced peeled apples
  • 1/3 cup slivered almonds

Instructions

  1. For the crust, combine 1 cup flour, 1/2 cup ground almonds, and 1/4 cup sugar in a bowl. Cut in 1/2 cup cold butter until the mixture is crumbly. Stir in 1/4 teaspoon almond extract.
  2. Shape the dough into a ball, placing it between two sheets of waxed paper. Roll it into a 10-inch circle and gently transfer it to a greased 9-inch springform pan, pressing it around the bottom and up the sides.
  3. Refrigerate the crust for 30 minutes before adding the filling.
  4. For the filling, beat 1 (8 ounce) package softened cream cheese, 1/4 cup sugar, and 1/4 teaspoon cream of tartar in a bowl until smooth. Add 1 egg and beat on low until just combined. Pour the mixture over the chilled crust.
  5. For the topping, in a separate bowl, combine 1/3 cup brown sugar, 1 tablespoon flour, and 1 teaspoon cinnamon. Add 4 cups thinly sliced peeled apples and stir until evenly coated. Spoon the apple mixture over the cheesecake filling and sprinkle with 1/3 cup slivered almonds.
  6. Bake in a preheated oven at 350°F for 40-45 minutes, until the cheesecake is set and the apples are tender.
  7. Once baked, cool the cheesecake on a wire rack for 10 minutes. Run a knife around the edge of the pan to loosen, then cool for an additional hour before refrigerating overnight. Remove the sides of the pan before serving.
