Ingredients

  • 1 cup sliced apple
  • 1/3 cup sugar
  • 1/4 teaspoon cinnamon
  • 1 small pinch freshly grated nutmeg
  • 2 tablespoons cornstarch
  • 2 teaspoons water
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/3 cup butter
  • 3/4 cup sugar
  • 1/2 cup applesauce
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup Greek yogurt (you could use plain yogurt as well or sour cream)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • 6 tablespoons milk

Instructions

  1. For the filling, combine 1 cup sliced apple, 1/3 cup sugar, 2 teaspoons water, 1/4 teaspoon cinnamon, and 2 tablespoons cornstarch in a small saucepan. Cook on low heat for 5 to 7 minutes, stirring constantly until the sauce thickens and the apples soften slightly. Set aside to cool.
  2. In a small bowl, mix 1/2 cup brown sugar with 1/2 teaspoon cinnamon until well combined and set aside.
  3. Preheat your oven to 350°. Grease and flour a 9×13 baking dish and set it aside.
  4. In a mixing bowl, cream together 1/3 cup butter and 3/4 cup sugar until light and fluffy, which should take about 3 minutes. Add in 1/2 cup applesauce and 1 teaspoon vanilla, mixing until combined. Add the 2 eggs one at a time, beating well after each addition.
  5. Sift together the dry ingredients: 2 1/4 cups flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon salt, and 1 teaspoon cinnamon. Gradually add the dry mixture to the butter mixture in three parts, alternating with 1 cup Greek yogurt in two parts, starting and ending with the dry ingredients. Beat until just combined, being careful not to overmix.
  6. Spoon half of the batter into the prepared pan. Carefully spread the cooled apple mixture over the batter. Evenly sprinkle 2/3 of the brown sugar cinnamon mixture over the apples, then cover with the remaining batter. Finish by sprinkling the rest of the brown sugar cinnamon mixture over the top.
  7. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake bakes, prepare the glaze by mixing 2 cups powdered sugar, 1 teaspoon vanilla, and 6 tablespoons milk until the desired consistency is reached. Once the cake is out of the oven, immediately and carefully pour the glaze over the hot cake, trying to distribute it evenly. You might need to tilt the cake a bit to help spread the glaze. Allow the cake to sit for a while for the glaze to set.
