Artisan Bread Flavor recipe

When it comes to baking bread, ingredient quality is key. Use high-quality all-purpose flour for the best texture. If you’re avoiding alcohol, feel free to substitute the beer with more water, but keep in mind that it may alter the flavor slightly. For those watching their sodium intake, you can reduce the amount of kosher salt, but remember that it plays an important role in flavor and fermentation. Always ensure your yeast is fresh to help the dough rise properly.

Servings1
Serving Size1 (732 g)

Ingredients

  • 15 ounces all-purpose flour
  • 1/2 teaspoon yeast
  • 1 1/2 teaspoons kosher salt
  • 7 ounces water
  • 3 ounces beer (not dark)
  • 1 teaspoon white vinegar

Instructions

  1. Stir 1 1/2 teaspoons kosher salt into 15 ounces of all-purpose flour, and then mix in 1/2 teaspoon yeast.
  2. Add 7 ounces of water, 3 ounces of beer, and 1 teaspoon of white vinegar to the dry ingredients. Knead the mixture for about 5 minutes until smooth and elastic.
  3. Place the dough in a lightly greased bowl, cover with plastic wrap, and let it rise for 2 hours in a warm spot.
  4. After the first rise, gently fold the dough several times, then cover again and let it rise for another 2 hours.
  5. Prepare a rising bowl by spraying parchment paper with cooking spray, then form the dough into a ball and place it in the parchment paper. Push down the ball, lightly spray the top with cooking spray, and cover with plastic wrap for a final rise until doubled in size, which may take about 1 1/2 hours.
  6. Once risen, sprinkle flour on the top of the dough and slash the surface with a sharp knife for a nice crust.
  7. Preheat your oven and a Dutch oven to 500 degrees Fahrenheit for at least 30 minutes.
  8. Carefully remove the hot Dutch oven from the stove, lift the parchment paper with the dough, and place both into the Dutch oven. Cover it with the lid.
  9. Lower the oven temperature to 450 degrees Fahrenheit and bake the bread covered for 25 minutes.
  10. After 25 minutes, remove the lid and bake for an additional 15 to 20 minutes, or until the bread is golden brown and the internal temperature reaches 200 degrees Fahrenheit.
  11. Once done, cool the bread uncovered on a wire rack.
