Asiago Spinach Breadsticks With Pine-Nuts are a delightful twist on your typical breadstick, offering a combination of savory cheese and vibrant spinach. The tasty treats are perfect for dipping, snacking, or serving alongside your favorite pasta dishes.

When it comes to ingredients, using freshly grated asiago makes a noticeable difference in flavor compared to pre-grated options. If you’re in a pinch, you could substitute other cheeses, like parmesan or mozzarella. For those with nut allergies, the pine nuts can be omitted or replaced with sunflower seeds for a similar crunch. Make sure your yeast is fresh for the best rise.

Asiago Spinach Breadsticks With Pine-Nuts Recipe
Ingredients
- 1/2 cup lukewarm water
- 1 egg, separated
- 1/4 cup freshly grated asiago cheese
- 5 ounces baby spinach leaves
- 2 tablespoons olive oil
- 1 teaspoon honey
- 1 teaspoon salt
- 2 cups all-purpose flour
- 1/4 cup toasted pine nuts
- 1 1/2 teaspoons yeast
- 2 teaspoons water
- coarse salt
Instructions
- Rinse the baby spinach leaves and microwave for 3 minutes. Drain and cool them in a colander before coarsely chopping.
- Separate the egg, placing the yolk into your bread machine pan and setting the egg white aside for the glaze.
- According to your bread machine instructions, add the remaining ingredients (except for 2 teaspoons of water and coarse salt) into the bread pan. It’s often best to start with the wet ingredients: the egg yolk, lukewarm water, olive oil, honey, and chopped spinach, followed by the flour and toasted pine nuts. Pour the salt to one side and create a small well in the flour for the yeast, sprinkling the grated asiago cheese on top.
- Set your machine to the dough cycle and press start.
- While the dough is mixing, grease two baking sheets to prepare for the breadsticks.
- Make an egg wash by combining the reserved egg white with the 2 teaspoons of water.
- Preheat your oven to 350 degrees F.
- Once the dough cycle is complete, remove the dough from the machine and gently punch it down to release some air.
- Divide the dough into 16 pieces, rolling each piece between your palms to form ropes about 6 inches long.
- Place the shaped breadsticks on the prepared baking sheets, leaving about 2 inches in between each one.
- Brush the tops of the breadsticks with the egg wash and sprinkle with coarse salt. If desired, you can also add more chopped pine nuts on top.
- Bake in the preheated oven until golden brown, about 20 minutes.
