When it comes to ingredient substitutions, feel free to swap neufchatel cheese with cream cheese based on your preference for creaminess. For those with dairy allergies, consider using dairy-free alternatives for yogurt, sour cream, and milk. Fresh blueberries are ideal, but frozen ones can work in a pinch; just make sure to thaw and drain them well to avoid excess moisture.

Ingredients

  • 1 loaf crusty French bread
  • 12 ounces neufchatel cheese or 12 ounces cream cheese
  • 8 large eggs, beaten
  • 1/3 cup maple syrup, plus extra for serving
  • 1/2 cup sour cream, plus extra (to garnish)
  • 1/2 cup plain yogurt
  • 1/2 cup milk
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 1/2 cups blueberries, plus extra (to garnish)

Instructions

  1. Preheat the oven to 350°F. Grease a 3- to 4-quart casserole dish.
  2. Cut the loaf of crusty French bread into 1/2-inch squares.
  3. In a food processor, combine 12 ounces of neufchatel cheese, the 8 beaten eggs, and 1/3 cup of maple syrup. Process until smooth.
  4. Add 1/2 cup of sour cream, 1/2 cup of plain yogurt, 1/2 cup of milk, 1/2 teaspoon of ground cinnamon, and 1 teaspoon of vanilla extract. Process again until the mixture is completely smooth.
  5. Layer half of the bread squares in the bottom of the prepared baking dish. Sprinkle half of the 1 1/2 cups of blueberries over the bread.
  6. Pour half of the cream cheese mixture over the blueberries, spreading it evenly to cover the layers.
  7. Add the remaining bread squares on top, followed by the rest of the blueberry mixture, and pour the remaining cream cheese mixture over everything, spreading it to ensure even coverage.
  8. Cover the baking dish tightly with foil and bake for 30 minutes. (Sometimes, I like to let it sit overnight in the fridge and bake it in the morning for extra convenience.)
  9. After 30 minutes, remove the foil and continue baking for an additional 30 minutes until the French toast is set, puffy, and lightly browned.
  10. Once baked, garnish with extra sour cream and blueberries. Serve with additional maple syrup on the side.
