Banana Blueberry Buttermilk Pancakes recipe

When making Banana Blueberry Buttermilk Pancakes, you can substitute whole wheat flour for all-purpose flour for a hearty twist. If allergies are a concern, a flax egg can replace the egg, and almond milk may work as a buttermilk alternative. Fresh blueberries are delightful, but frozen ones can also do the trick, just keep in mind they may bleed a bit more color into the batter.

Serving Size1 (166 g)

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1 cup buttermilk
  • 3 tablespoons melted butter
  • 1/2 cup mashed ripe banana
  • 1/2 cup fresh blueberries

Instructions

  1. Wisk together 1 cup all-purpose flour, 1 teaspoon baking powder, 1/4 teaspoon baking soda, and 1/4 teaspoon salt in a large bowl. Set aside for now.
  2. In a separate bowl, lightly beat 1 egg and mix in 2 tablespoons honey, 1/2 teaspoon vanilla extract, 1 cup buttermilk, and 3 tablespoons melted butter until combined.
  3. Gently fold in 1/2 cup mashed ripe banana until just incorporated. Don’t go overboard; we want those banana chunks to remain.
  4. Carefully pour the wet mixture into the bowl with the dry ingredients. Wisk only until combined, allowing for lumps. Overmixing can lead to tough pancakes, and nobody wants that.
  5. Heat a skillet over medium heat, adding a small amount of oil or butter to prevent sticking. Pour out about 1/4 cup batter into the skillet, and drop 3 or 4 fresh blueberries on top of each pancake.
  6. Cook until bubbles appear on the surface, then flip and cook for an additional minute or two until golden brown. Serve warm and enjoy.
