When making Banana Bread for Vegans, feel free to experiment with the flour. Whole wheat flour offers a hearty texture, but any other flour can work well too. If you’re avoiding certain allergens, double-check the vegan margarine or opt for oil instead. For sweetening, agave nectar is a fantastic alternative, but sugar is a fine choice, if preferred. The ground flax seeds replace eggs and can be swapped for other vegan egg replacers if desired. Make sure your bananas are very ripe; that’s when they taste their sweetest and lend the best flavor to the bread.

Ingredients

  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 cup vegan margarine
  • 2/3 cup agave nectar
  • 2 tablespoons ground flax seeds
  • 2 tablespoons hot water
  • 2 1/3 cups mashed almost black bananas
  • 1 teaspoon cinnamon
  • 1 teaspoon carob powder
  • 1/4 cup chopped vegan chocolate

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch pan.
  2. In a mixing bowl, combine 2 cups of whole wheat flour, 1 teaspoon of baking soda, and your choice of spices, like 1 teaspoon of cinnamon and 1 teaspoon of carob powder.
  3. In a separate cup, mix 2 tablespoons of ground flax seeds with 2 tablespoons of hot water, allowing it to sit for about 1 minute, creating your egg substitute.
  4. To the flour mixture, add 1/2 cup of softened or melted vegan margarine and 2/3 cup of agave nectar. Stir until well combined.
  5. Now, stir in 2 1/3 cups of mashed almost black bananas along with the flax mixture, blending everything together until smooth.
  6. Finally, fold in 1/4 cup of chopped vegan chocolate, giving the batter an indulgent twist.
  7. Pour the batter into the prepared pan, spreading it evenly.
  8. Bake in the preheated oven for 60-65 minutes. Check for doneness by inserting a toothpick; it should come out clean when the bread is ready.
  9. Once baked, allow the bread to cool in the pan for 10 minutes before serving.
