Banana Bread French Toast With Cr me Fra che recipe

When it comes to banana bread, homemade is fantastic, but store-bought can save you time without sacrificing flavor. Whole milk or half-and-half can cater to your creaminess preference, while eggs can be substituted with a vegan option if needed. Remember, ripe bananas are essential for sweetness, and you can choose between crème fraîche or light sour cream based on what you have on hand. Allergies to dairy can be managed with alternatives, so feel free to adapt as necessary.

Ingredients

  • 1 loaf banana bread (8-by-4-inch, home-made or purchased)
  • 1 cup whole milk or 1 cup half-and-half
  • 4 eggs
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon freshly ground nutmeg
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 2 ripe bananas, thinly sliced
  • confectioners’ sugar
  • 1/2 cup crème fraîche or 1/2 cup light sour cream
  • 1/2 cup orange marmalade

Instructions

  1. Preheat oven to 200 degrees to keep the French toast warm later.
  2. Cut the ends off the banana bread loaf. Slice the bread into 3/4-inch-thick pieces, then cut each slice in half diagonally to create triangles. Set the pieces aside.
  3. In a shallow dish or pie plate, mix together 1 cup of whole milk or half-and-half, 4 eggs, 1/2 teaspoon vanilla, 1/4 teaspoon salt, 1/4 teaspoon ground cinnamon, and 1/8 teaspoon freshly ground nutmeg; set aside.
  4. Heat a large non-stick griddle or skillet over medium heat until hot. Add 1/2 tablespoon vegetable oil and 1 tablespoon butter to the griddle.
  5. Gently dip a couple of the bread triangles into the egg mixture, ensuring both sides are soaked. Carefully transfer each piece to the hot skillet.
  6. Cook until golden brown, about 2 to 3 minutes, then flip each piece. Cook the second side for an additional 1 to 2 minutes until golden brown.
  7. Transfer the cooked French toast to an ovenproof platter and keep warm in the oven. Repeat the process with the remaining bread and use the rest of the oil and butter as needed.
  8. Serve the French toast topped with powdered sugar, banana slices, and dollops of orange marmalade and crème fraîche (or light sour cream) on the side.
