Banana Bread recipe

When making Banana Bread ( With Cauliflower), feel free to substitute the whole wheat flour with all-purpose flour if you prefer a lighter texture. For those with allergies, you can use egg substitutes or even applesauce instead of egg whites. Sourcing fresh bananas and cauliflower is key; ripe bananas will ensure sweetness, while fresh cauliflower is best for pureeing and blending seamlessly into the batter.

Serving Size1 (55 g)

Ingredients

  • nonstick cooking spray
  • 3/4 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup vegetable oil
  • 2 large egg whites
  • 1 1/2 cups banana puree
  • 1/2 cup cauliflower
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and coat a 9 x 5 inch loaf pan with nonstick cooking spray.
  2. In a bowl, mix together 3/4 cup of whole wheat flour, 1/2 cup of all-purpose flour, 1/2 teaspoon of baking soda, 1/4 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/2 teaspoon of cinnamon. Set it aside for later.
  3. In another large mixing bowl, combine 1/2 cup of firmly packed brown sugar and 1/4 cup of vegetable oil until smooth and well combined.
  4. Mix in 2 large egg whites, 1 1/2 cups of banana puree, 1/2 cup of cauliflower (pureed), and 1 teaspoon of vanilla extract until fully blended together.
  5. Now, add the flour mixture to the wet ingredients, stirring until just combined. Do not overmix; a few lumps are perfectly fine.
  6. Pour the batter into the prepared loaf pan, smoothing out the top as needed.
  7. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Be sure to resist the urge to open the oven too soon; we want that bread to rise beautifully.
  8. Once baked, let the bread cool in the pan for about 5 minutes before turning it out onto a rack to cool completely before slicing.
