When it comes to ingredients, feel free to play around a bit. If you need a gluten-free option, you could swap in a gluten-free flour blend. For those watching their sugar intake, Splenda works wonders, but brown sugar gives a richer flavor. Make sure your bananas are nicely ripe for that sweet, moist bread; if you’re allergic to any specific spices, simply omit them or substitute with what you enjoy.

Serving Size1 (45 g)

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup brown sugar (I use splenda)
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking soda
  • 1/4 cup canola oil
  • 2 eggs
  • 1/4 cup orange juice
  • 2 large bananas
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 dash cayenne pepper
  • 2 teaspoons orange zest

Instructions

  1. In a medium-sized bowl, mix together 1 1/2 cups flour, 3/4 cup brown sugar, 1/2 teaspoon salt, 2 teaspoons baking soda, and 1/2 teaspoon baking soda until well combined.
  2. In another bowl, whisk together 1/4 cup canola oil, 2 eggs, 1/4 cup orange juice, and the mashed flesh of 2 large bananas.
  3. Add 1/2 teaspoon vanilla, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, a dash of cayenne pepper, and 2 teaspoons orange zest to the wet mixture, stirring well.
  4. Gradually combine the dry ingredients with the wet ingredients, mixing just until combined. Be careful not to overmix; lumpy is good here.
  5. Pour the batter into a greased bread pan, smoothing the top with a spatula if needed.
  6. Bake in a preheated oven at 350 degrees for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow it to cool in the pan for a bit before transferring to a wire rack.
