When it comes to ingredients, feel free to substitute all-purpose flour with whole wheat flour for a healthier option. If buttermilk is not available, mixing regular milk with a bit of vinegar can mimic its tangy flavor. Keep in mind that bananas should be ripe for the best flavor, and those with brown spots are perfect. For those with dietary restrictions, check for shortening that meets your needs.

Banana Crumb Muffins Recipe
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup sugar
- 3 tablespoons vegetable oil
- 1/2 cup buttermilk
- 1 egg
- 2/3 cup mashed banana, divided
- 1 teaspoon vanilla
- 1/2 cup flour
- 1/4 cup sugar
- 1/4 teaspoon salt
- 3 tablespoons shortening, cut into small pieces
- 1 tablespoon mashed banana (reserved from 2/3 cup mashed banana)
Instructions
- Preheat the oven to 350°F and grease or line 12 muffin tins with paper liners.
- Prepare the crumb topping by whisking together 1/2 cup flour, 1/4 cup sugar, and 1/4 teaspoon salt in a small bowl. Cut in 3 tablespoons of shortening until the mixture resembles coarse crumbs—larger crumbs are more desirable. Stir in 1 tablespoon of reserved mashed banana and set aside.
- In a medium bowl, sift together 1 1/2 cups of all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/2 teaspoon salt.
- In a large bowl, whisk together 2/3 cup sugar, 3 tablespoons vegetable oil, 1/2 cup buttermilk, 1 egg, 2/3 cup mashed banana, and 1 teaspoon vanilla until well combined.
- Pour the flour mixture into the banana mixture, stirring gently until the batter is just combined—overmixing can lead to tough muffins, and nobody wants that.
- Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full.
- Top each muffin with the crumb mixture, dividing it evenly among the muffins.
- Bake for 18-21 minutes, or until a toothpick inserted into the center comes out clean and the muffins spring back when gently touched.
