When it comes to ingredients, you can easily switch out the low-fat milk for almond or oat milk if you’re looking for a dairy-free option. The fat-free condensed milk adds sweetness without the calories, but you could substitute regular condensed milk if desired. Just keep an eye on the banana ripeness; you want them sweet but not overly soft, otherwise, the texture might get a bit mushy.

Serving Size1 (362 g)

Ingredients

  • 1 (1 1/2 ounce) box fat-free sugar-free instant vanilla pudding mix
  • 3 cups low-fat milk
  • 1 (14 ounce) can fat-free condensed milk
  • 12 ounces light Cool Whip
  • 8 -10 bananas
  • lemon juice
  • 1 (11 ounce) box reduced-fat vanilla wafers

Instructions

  1. In a large bowl, mix 1 (1 1/2 ounce) box fat-free sugar-free instant vanilla pudding mix, 3 cups low-fat milk, 1 (14 ounce) can fat-free condensed milk, and 12 ounces light Cool Whip until well combined. Let it set in the fridge for about 10 minutes.
  2. While the pudding mixture is setting, slice 8 to 10 bananas and toss them with lemon juice to prevent browning. Don’t be alarmed if they feel a bit slimy; that just means they’re coated well.
  3. In a large serving bowl, start layering with reduced-fat vanilla wafers, then add a layer of the sliced bananas, followed by a layer of the pudding mixture. Repeat the layers two more times for a total of three layers.
  4. For the final touch, garnish the top with any crumbs remaining from the reduced-fat vanilla wafers. The adds a nice crunch and visual appeal.
  5. Cover the bowl with plastic wrap and refrigerate for several hours, or ideally overnight, to let the flavors meld together before serving.
