Berry Ice Cream Log recipe

When crafting the Berry Ice Cream Log, consider using fresh berries for vibrant flavor; however, frozen ones can work in a pinch—just be sure to thaw and drain them. If you’re looking for a sugar alternative, feel free to swap the icing sugar with your favorite sweetener, but keep in mind the texture may vary. Always double-check for any berry allergies if sharing with others, as strawberries and raspberries can be common culprits.

Berry Ice Cream Log Recipe

Servings10
Serving Size1 (213 g)

Ingredients

  • 2 liters vanilla ice cream, softened
  • 750 g strawberries, hulled (2 punnets)
  • 240 g raspberries
  • 1/4 cup icing sugar
  • extra berries, to taste

Instructions

  1. Line a 14 cm x 21 cm loaf pan with baking paper, ensuring it covers the base and sides for easy removal.
  2. Spread 2 liters of softened vanilla ice cream evenly over the base of the prepared pan, smoothing it out for a lovely layer.
  3. Freeze the pan for 1 hour until the ice cream is firm enough to hold the fruit mixture.
  4. In the meantime, place 750 g of hulled strawberries, 240 g of raspberries, and 1/4 cup of icing sugar into a blender. Blend until smooth, creating a luscious berry sauce.
  5. Strain the mixture into a jug, discarding any seeds that might sneak through; we want a smooth texture here.
  6. Pour the berry mixture over the frozen ice cream layer, spreading it out evenly to ensure every slice has a burst of flavor.
  7. Cover the pan and freeze overnight for the best results, allowing the flavors to meld beautifully.
  8. Remove the log from the freezer about 10 minutes before serving, letting it soften slightly for easier slicing.
  9. Invert the pan onto a platter, gently peeling away the baking paper to reveal the colorful log. Cut into slices and serve with extra berries on the side.
