For a gluten-free option, whole wheat flour can be swapped with a gluten-free flour blend. If you’re looking to reduce sugar, brown sugar Splenda is a great alternative, but regular brown sugar will work just fine too. The blueberries can be replaced with other fruits like raspberries or chopped apples for a fun twist. Be mindful of allergies, particularly with cereal choices, as some may contain allergens like gluten or nuts.

Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup packed brown sugar (or brown sugar Splenda, if preferred)
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 cups bran flakes
  • 1 cup all-bran cereal
  • 2 cups skim milk
  • 1 teaspoon lemon juice
  • 1/2 cup unsweetened applesauce
  • 1 egg
  • 1 cup blueberries

Instructions

  1. Lightly spray a muffin pan with oil spray and set your oven to 400 degrees.
  2. In a large bowl, mix together 2 cups of whole wheat flour, 1/2 cup of packed brown sugar, 4 teaspoons of baking powder, 1/4 teaspoon of salt, and 1/2 teaspoon of cinnamon.
  3. Make a well in the center of the dry ingredients and set it aside while you prepare the wet mix.
  4. In another bowl, measure 2 cups of bran flakes and 1 cup of all-bran cereal. Stir in 1 teaspoon of lemon juice to 2 cups of skim milk to sour it, and then pour the soured milk over the cereals.
  5. Add 1/2 cup of unsweetened applesauce and 1 beaten egg to the cereal mixture. Stir it all together until well blended, then pour it over the dry ingredients, mixing lightly until just combined.
  6. Gently fold in 1 cup of blueberries, stirring just enough to distribute them without overmixing.
  7. Spoon the batter into the prepared muffin tins, filling each cup about two-thirds full, and bake for approximately 25 minutes until they’re golden and a toothpick comes out clean.
