For those looking to substitute ingredients, feel free to swap golden caster sugar with regular granulated sugar, though the flavor may vary slightly. If you’re dairy-free, consider using a plant-based butter and cream cheese alternative to maintain that creamy texture. Additionally, fresh blueberries work wonders, but frozen ones can be a convenient substitute if you find yourself in a berry bind.

  2. Butter and line the base of an 8-inch round loose-bottomed cake tin.
  3. In a bowl, beat together 6 ounces of soft butter, 6 ounces of golden caster sugar, 3 eggs, 8 ounces of self-raising flour, 1 teaspoon of baking powder, and 2 teaspoons of vanilla extract with an electric mixer for 2 minutes.

  9. Spread the frosting over the top of the cooled cake and scatter the remaining blueberries on top.
  10. The cake can be stored in the fridge for a couple of days, but make sure to bring it to room temperature for about 1 hour before serving.
