When it comes to substitutions, feel free to swap the canola oil for vegetable oil based on what you have on hand, and if you’re looking for a dairy-free option, a plant-based yogurt could work just as well. If you have a banana lover in your life, ripe bananas are essential; the riper, the sweeter. For those with allergies, double-check the labels on the flour blend and chocolate chips, as they may contain allergens. Quality ingredients will make all the difference in flavor, so opt for fresh products if possible.

Ingredients

  • 3/4 cup splenda brown sugar substitute
  • 1/2 cup canola oil or 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 cup plain yogurt
  • 3 ripe bananas, mashed (about 1 1/2 cups)
  • 2 teaspoons vanilla
  • 2 cups Robin Hood Nutri Flour Blend
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon chipits semi-sweet chocolate chips
  • 1 banana, sliced
  • icing sugar (to garnish)

Instructions

  1. Preheat your oven to 350°F and grease two 8 or 9-inch cake pans.
  2. In an electric mixer, beat together 3/4 cup of splenda brown sugar substitute and 1/2 cup of oil until well combined. Add 2 eggs, one at a time, making sure to beat well after each addition.
  3. Next, add in 1/2 cup plain yogurt, 3 ripe bananas (mashed, about 1 1/2 cups), and 2 teaspoons vanilla. Mix until everything is combined.
  4. Stir in 2 cups of Robin Hood Nutri Flour Blend, 1 teaspoon baking powder, and 1 teaspoon baking soda. Mix until just combined, being careful not to overmix.
  5. Gently fold in 1/4 teaspoon of chipits semi-sweet chocolate chips until evenly distributed throughout the batter.
  6. Pour the batter evenly into the prepared pans and bake for about 30 minutes, or until a toothpick stuck in the center comes out clean.
  7. Once baked, let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. To assemble, place one layer of cake on a serving platter and add the sliced banana on top. Place the second layer of cake on top of the bananas.
  9. If desired, dust the top with icing sugar for a lovely finish.
  10. For a more decadent treat, melt 3/4 cup of Chipits Semi-sweet chocolate chips in a heat-proof bowl with 1/4 cup of heated Carnation fat-free evaporated milk. Drizzle half of the chocolate mixture over the sliced bananas before placing the second layer of cake on top.
  11. Finish by drizzling the remaining chocolate mixture over the top layer of the cake.
