Buckeye Cookie Bars recipe

When preparing Buckeye Cookie Bars, consider using natural peanut butter for a healthier option, or substitute with almond butter if you have peanut allergies. For a richer texture, high-quality chocolate fudge frosting is recommended, but any chocolate frosting will still do the job. Ensure your eggs are at room temperature for better mixing, and feel free to swap the chopped peanuts with any nut or even chocolate chips if you’d like a sweeter twist.

Buckeye Cookie Bars Recipe

Total Time≤ 1 hour

Serving Size1 (381 g)

Ingredients

  • Crisco® Original No-Stick Cooking Spray
  • 1 (12 ounce) package Pillsbury® Moist Supreme® Devil’s Food Premium Cake Mix
  • 1/4 cup Crisco® Pure Vegetable Oil
  • 1 large egg
  • 1 cup peanuts, chopped
  • 1 (14 ounce) can Eagle Brand® Sweetened Condensed Milk
  • 1/2 cup Jif® Creamy Peanut Butter
  • 1/3 cup Pillsbury® Creamy Supreme® Chocolate Fudge Flavored Frosting

Instructions

  1. HEAT the oven to 350ºF and lightly coat a 13 x 9-inch pan with no-stick cooking spray.
  2. In a large bowl, BEAT together 1 (12 ounce) package of Pillsbury® Moist Supreme® Devil’s Food Premium Cake Mix, 1/4 cup of Crisco® Pure Vegetable Oil, and 1 large egg on medium speed until the mixture resembles coarse crumbs.
  3. Stir in 1 cup of chopped peanuts, making sure they’re evenly distributed. RESERVE 1 1/2 cups of the crumb mixture for later. PRESS the remaining mixture firmly onto the bottom of the prepared pan to form a crust.
  4. In a medium bowl, BEAT 1 (14 ounce) can of Eagle Brand® Sweetened Condensed Milk and 1/2 cup of Jif® Creamy Peanut Butter together until smooth and creamy. SPREAD the mixture evenly over the crust you’ve just pressed down.
  5. Next, SPRINKLE the reserved crumb mixture over the top of the peanut butter layer, ensuring it covers evenly.
  6. BAKE for 25 to 30 minutes, or until the bars are set and slightly firm. Once baked, let them COOL completely in the pan.
  7. To make the drizzling chocolate topping, PLACE 1/3 cup of Pillsbury® Creamy Supreme® Chocolate Fudge Flavored Frosting into a corner of a 1-quart resealable food storage bag. SEAL the bag, then MICROWAVE it on HIGH for 5 seconds to soften the frosting.
  8. SNIP off a small edge of the bag corner, then SQUEEZE the bag to drizzle the frosting over the crumb topping in a criss-cross pattern. CHILL the bars to set the chocolate drizzle, which will make cutting them into bars easier.
