Butter Rum Muffins recipe

When preparing Butter Rum Muffins, feel free to swap out regular milk with almond or oat milk for a dairy-free version. Be mindful of the rum if you’re serving anyone who avoids alcohol; you might try a rum extract instead to keep the flavor profile intact. Fresh spices like nutmeg and cloves really enhance the muffin’s essence, so consider investing in quality spices for the best results.

Butter Rum Muffins Recipe

Total Time≤ 1 hour

Serving Size1 (805 g)

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 eggs
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup milk
  • 3 tablespoons rum
  • 2 tablespoons rum
  • 3 tablespoons sugar
  • milk, if needed

Instructions

  1. Preheat your oven to 375 degrees F and prepare 12 muffin cups by greasing or lining them.
  2. In a mixing bowl, beat 1/2 cup softened butter with an electric mixer until it’s creamy; then, add 1/2 cup sugar and mix well.
  3. Crack in the 2 eggs, adding them one at a time and beating just until blended after each addition.
  4. In another bowl, whisk together 2 cups flour, 2 teaspoons baking powder, 1/2 teaspoon salt, 1/8 teaspoon ground cloves, and 1/8 teaspoon ground nutmeg.
  5. In a separate bowl, combine 1/2 cup milk and 3 tablespoons of rum, stirring to blend.
  6. Now, alternately add the flour mixture and the milk mixture to the butter mixture, starting and ending with the flour mixture, mixing only until JUST blended. No over-mixing here, please.
  7. Spoon the batter into the muffin pan, filling each cup about 3/4 full to allow for rising.
  8. Slide the muffin pan into the preheated oven and bake for 20 to 25 minutes, or until the tops are golden and a toothpick comes out clean.
  9. Once baked, remove the muffins from the pans immediately and let them cool on a wire rack.
  10. For a delightful glaze, combine the remaining 2 tablespoons of rum and 3 tablespoons of sugar in a small saucepan; heat slowly, stirring constantly until the sugar dissolves. If it’s too thick, just add a splash of milk to loosen it up.
  11. Finally, brush the glaze over the warm muffins for that finishing touch.
