Feel free to get creative with your flavorings; any extracts you prefer can easily substitute for vanilla. When it comes to the shortening, using quality brands can make a difference in taste and consistency. If you’re looking to adapt for allergies, consider plant-based margarine as a suitable alternative to shortening. Just be cautious of how it might affect the texture and stability of your icing.
Frosting & Icing
Buttercream Icing Recipe
Ingredients
- 2 cups solid white vegetable shortening
- 2 teaspoons vanilla extract
- 7 – 8 tablespoons water or 7 – 8 tablespoons milk
- 1 kg confectioners’ sugar (icing, approx. 8 cups)
- 2 tablespoons Wilton meringue powder
- 1 pinch salt
- 1/2 cup cocoa or 6 ounces unsweetened chocolate squares, melted and cooled
- 4 – 6 tablespoons water
Instructions
- In a large mixing bowl, cream together 2 cups of solid white vegetable shortening, 2 teaspoons of vanilla extract, and 7 to 8 tablespoons of water until smooth.
- Gradually add 1 kg of confectioners’ sugar, 2 tablespoons of Wilton meringue powder, and a pinch of salt, mixing on medium speed until all ingredients are thoroughly combined.
- Blend for an additional minute or so until the mixture is creamy. If the icing is too hard, don’t fret; add more water, one tablespoon at a time, until your desired consistency is reached.
- If you want to create a chocolate version of your icing, simply incorporate 1/2 cup of cocoa or 6 ounces of melted unsweetened chocolate squares into the mixture, along with the 4 to 6 tablespoons of water needed for consistency.
- Remember, the buttercream icing makes enough to frost 36 cupcakes, perfect for any occasion.
