For the best results, use high-quality buttermilk and fresh yeast to achieve those light and fluffy rolls. Honey adds a lovely sweetness, but you could swap it for sugar or agave syrup if needed. Always ensure your ingredients are at room temperature for optimal mixing and rising, especially the buttermilk and butter. Those with gluten sensitivities should explore gluten-free flour options, though the texture may vary slightly.

Serving Size1 (102 g)

Ingredients

  • 2 tablespoons dry active yeast
  • 1/4 cup honey
  • 1 1/2 cups buttermilk, heated to lukewarm
  • 1/2 cup melted butter
  • 5 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Instructions

  1. Dissolve 2 tablespoons dry active yeast, 1/4 cup honey, and 1 1/2 cups lukewarm buttermilk by stirring them together in a bowl.
  2. Stir in 1/2 cup melted butter until well combined.
  3. Mix in 2 cups flour, 1 teaspoon baking soda, and 1 teaspoon salt. Beat the mixture well, then cover it with plastic wrap and a towel.
  4. Place the bowl in a warm area, like a heated oven, and let it rise until the dough has risen about 2 inches up the bowl, roughly 25 minutes.
  5. After rising, stir down the dough, then gradually add enough of the remaining flour to create a soft dough, aiming to incorporate the last 3 cups. Start by stirring, then knead in as much flour as you can.
  6. Lightly oil a clean bowl, place the dough inside, and cover it again. Let it rise in a warm place until it has doubled in size, about 30 minutes.
  7. Once doubled, punch down the dough to release air, then divide it into 24 pieces, shaping each into smooth, rounded balls.
  8. Arrange the rolls 1 inch apart in an oiled pan, cover them again, and place them in a warm area to rise until doubled, which takes about 30 minutes.
  9. Preheat your oven to 400 degrees and bake the rolls for 20 minutes. For even softer rolls, brush melted butter on top after removing them from the oven.
