Caramel Cheesecake Heaven is a delightful dessert that combines rich cream cheese with a luscious caramel layer. Perfect for gatherings, the cheesecake offers a satisfying crunch from toasted pecans and a touch of chocolate, making it a decadent treat for any occasion.

For those looking to switch things up, you can substitute the vanilla wafer crumbs with graham cracker crumbs for a different flavor profile. If you have nut allergies, feel free to omit the pecans or replace them with a nut-free topping. Always ensure that your cream cheese is at room temperature for a smooth blend, and consider sourcing high-quality chocolate chips to enhance the flavors.

- 1 1/2 teaspoons vanilla extract
- 2 eggs
- 1/2 cup semi-sweet chocolate chips
Instructions

- Toast the pecans for 6 minutes at 350°F, then remove and set aside, keeping the oven at the same temperature.

- Melt the 1/2 cup of semi-sweet chocolate chips in the double boiler, then mix them into the cream cheese mixture.
- Pour the cream cheese batter over the caramel layer in the pan.
- Bake at 350°F for 40 minutes, or until the cheesecake is barely set in the center.
