Caramel Gingerbread Cupcakes bring a delightful twist to a classic treat, merging the warm spices of gingerbread with sweet caramel goodness. Perfect for any festive gathering, the cupcakes are sure to impress friends and family while satisfying your sweet tooth.

When it comes to substitutions, you can always adjust the ginger to suit your taste. Fresh ginger packs a punch, while ground ginger offers a milder flavor. For a nutty twist, consider adding chopped nuts instead of toffee bits. If allergies are a concern, carefully check the labels for allergens like gluten in the gingerbread mix and dairy in the frosting and caramel sauce. Sourcing high-quality ingredients can really make a difference, particularly the ginger and caramel, so seek out brands you trust.

- 1 (8 ounce) container vanilla frosting, at room temp
- 2 -3 teaspoons grated fresh ginger or 1/2-1 teaspoon ground ginger
- 1/2-3/4 cup English toffee bits
- 1 (14 ounce) package gingerbread mix
- 1 1/4 cups lukewarm water
- 1 egg
- 1 (12 ounce) jar caramel ice cream topping
- 6 gingerbread cookies, broken in half
Instructions
- Preheat the oven to 350°F and grease or line 12 muffin cups before setting them aside.
- Prepare the gingerbread mix according to the package directions, adding 1 1/4 cups lukewarm water and 1 egg to combine everything well. Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes, or until a wooden toothpick inserted into the center comes out clean.
- Once baked, let the cupcakes cool completely on a wire rack. In the meantime, mix together the room temperature vanilla frosting and 2-3 teaspoons of grated fresh ginger or 1/2-1 teaspoon of ground ginger to create a zesty frosting.
- When the cupcakes are cool, generously frost each one with the ginger-infused frosting and sprinkle with 1/2-3/4 cup of English toffee bits for a bit of crunch.
- Just before serving, gently heat the caramel ice cream topping in a saucepan until warm and pourable. Place half of a gingerbread cookie on top of each cupcake and drizzle with the warm caramel sauce.
