Cheesecake Coffee Cups recipe

When making Cheesecake Coffee Cups, using a high-quality pound cake can make all the difference in flavor and texture. If you’re vegan or lactose intolerant, consider using plant-based cream cheese and a dairy-free condensed milk alternative. Additionally, feel free to switch out the raspberry preserves for another fruit preserve or even fresh fruit if you’re feeling adventurous.

Ingredients

  • 3/4 cup brewed strong coffee
  • 12 ounces poundcake, premade
  • 8 ounces cream cheese, softened
  • 1 (14 ounce) can condensed milk
  • 1/2 cup raspberry preserves
  • 1 (3 ounce) box cheesecake flavor instant pudding and pie filling mix

Instructions

  1. Pour the 3/4 cup of brewed strong coffee into a mixing bowl.
  2. Crumble the 12 ounces of poundcake into the coffee and mix until the coffee soaks through the cake.
  3. Press the pound cake mixture into the bottom of a muffin pan, filling each cup approximately halfway.
  4. Blend the 8 ounces of softened cream cheese and 1 can (14 ounces) of condensed milk until the mixture is smooth and creamy.
  5. Add the 3 ounces of cheesecake flavor instant pudding mix and whip until the mixture becomes firm and fluffy.
  6. Spoon the cheesecake mixture on top of the pound cake mixture in the muffin pan, filling each cup generously.
  7. Place the muffin pan in the freezer for 4 to 6 hours to allow the cheesecake cups to set properly.
  8. Once set, remove the cheesecakes by running a knife around the edges of each cup, letting them sit for about 10 minutes to soften slightly.
  9. In the meantime, microwave the 1/2 cup of raspberry preserves for 30 to 40 seconds until warm, then drizzle over the tops of the cheesecake cups.
