Ingredients

  • 1/4 cup finely chopped pecans
  • 1/4 cup finely chopped almonds
  • 1/4 cup finely chopped walnuts
  • 3/4 cup finely chopped vanilla wafer
  • 2 tablespoons melted butter
  • 1 1/2 lbs cream cheese
  • 1 1/3 cups sugar
  • 5 large eggs
  • 16 ounces sour cream
  • 1/4 cup flour
  • 2 teaspoons vanilla extract
  • 2 teaspoons lemon juice

Instructions

  1. For the crust, combine 1/4 cup finely chopped pecans, 1/4 cup finely chopped almonds, 1/4 cup finely chopped walnuts, and 3/4 cup finely chopped vanilla wafer crumbs in a bowl. Mix in 2 tablespoons melted butter until well combined. Press the mixture into a 9-inch buttered springform pan, making sure to line the sides about 1 1/2 inches up. Set aside.
  2. Ensure all ingredients are at room temperature before starting the cheesecake. The step is crucial for a smooth filling.
  3. In a large mixing bowl, beat 1 1/2 lbs cream cheese until it’s light and fluffy, keeping the mixer on a low setting throughout.
  4. Gradually add in 1 1/3 cups sugar a little at a time, continuing to beat until the mixture is creamy and well combined.
  5. Add the eggs one at a time, mixing thoroughly after each addition until fully incorporated.
  6. Once the eggs are mixed in, add 1/4 cup flour, 2 teaspoons vanilla extract, and 2 teaspoons lemon juice. Mix well to combine all the ingredients smoothly.
  7. Finally, add 16 ounces sour cream to the mixture and beat until the filling is well combined and creamy. Pour the cheesecake mixture into the prepared springform pan over the crust.
  8. Place the pan on the top rack in the middle of a preheated oven set to 325 degrees Fahrenheit. Bake for one hour and 15 minutes.
  9. When the baking time is complete, turn off the oven, prop open the door, and allow the cheesecake to stay in the oven for an additional hour. The helps to prevent cracking.
  10. After one hour, carefully remove the cheesecake from the oven. Let it cool for a bit before transferring it to the refrigerator, where it should chill for 24 hours to develop its flavors.
