Ingredients

  • 4 cups frozen dark sweet cherries (can use 1 cup more)
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon cinnamon
  • 1 pinch salt
  • 1 1/2 cups flour
  • 2 tablespoons sugar (can use 1 tablespoon)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup cold butter, cut into small pieces (no substitutes)
  • 2/3 cup buttermilk

Instructions

  1. Set the oven to 400 degrees and position the oven rack to the second-lowest level.
  2. Butter a 9-inch glass baking dish to prevent sticking.
  3. To prepare the filling, cook the 4 cups of frozen dark sweet cherries, 1/2 cup sugar, 2 tablespoons cornstarch, 1/4 teaspoon cinnamon, and a pinch of salt in a 2-quart heavy saucepan over medium heat. Stir occasionally until the sugar begins to dissolve, which should take about 3 to 4 minutes.
  4. Once the filling is ready, spoon it into the prepared baking dish.
  5. For the topping, whisk together 1 1/2 cups flour, 2 tablespoons sugar, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/4 teaspoon salt in a medium bowl.
  6. Using your fingertips or a pastry blender, blend in 1/4 cup cold butter until the mixture resembles coarse meal.
  7. Stir in 2/3 cup buttermilk with a fork until just combined; be careful not to overmix.
  8. Drop the dough in mounds over the filling in the baking dish, leaving some space between the mounds for expansion.
  9. Lightly sprinkle sugar over the dough mounds to add a little sweetness.
  10. Bake for about 25 to 30 minutes, or until the topping is golden brown and the fruit is bubbling beneath.
  11. Once baked, cool slightly before serving warm, and enjoy.
