When it comes to substitutions, feel free to swap in coconut oil for the butter or honey for the sugar if you’re looking for a different flavor profile or a slight health boost. Gluten-free flour can replace the all-purpose and whole wheat flours for those with gluten sensitivities, but always check your labels to ensure they meet your requirements. Also, if walnuts aren’t your thing, pecans or even sunflower seeds can add a different crunch. And remember, the riper the banana, the sweeter the muffins will be.
