Chocolate Covered Nutty Ice Cream Pie recipe

When making the Chocolate Covered Nutty Ice Cream Pie, feel free to substitute regular vanilla ice cream if you prefer a richer flavor. For a nut-free version, you can omit the peanuts or replace them with sunflower seeds. Always check for allergy concerns with maraschino cherries, as they may contain additives that some people wish to avoid. Sourcing quality ingredients, especially the ice cream and hot fudge, can enhance the overall taste of the pie.

Serving Size1 (160 g)

Ingredients

  • 1 quart low-fat vanilla ice cream, slightly softened, about 4 cups
  • 1/2 cup peanuts, chopped
  • 1/3 cup maraschino cherry, well drained and chopped
  • 1 graham cracker crust
  • 1 cup hot fudge
  • 1 -2 tablespoon coffee-flavored liqueur
  • 8 whole maraschino cherries

Instructions

  1. In a large bowl, combine 1 quart of slightly softened low-fat vanilla ice cream, 1/2 cup of chopped peanuts, and 1/4 cup of well-drained and chopped maraschino cherries; blend well until mixed smoothly.
  2. Spoon the ice cream mixture into a graham cracker crust, spreading it evenly. Cover and freeze for 4 to 6 hours or until the pie is firm to the touch.
  3. Once ready to serve, remove the pie from the freezer and let it stand at room temperature for about 10 minutes to soften slightly for easier cutting.
  4. While the pie is resting, combine 1 cup of hot fudge sauce and 1 to 2 tablespoons of coffee-flavored liqueur in a small saucepan. Heat over low heat, stirring occasionally until warm, but not boiling.
  5. Spoon the warm fudge sauce over individual servings of pie and garnish each piece with a whole maraschino cherry.
