When baking the cookies, feel free to swap out the walnuts for another nut if allergies are a concern, or leave them out altogether for a nut-free version. Quality chocolate makes a big difference here; a high-percentage dark chocolate can bring a wonderful richness to the cookies. If you can’t find cake flour, you can substitute with all-purpose flour, but remember it may slightly change the texture.
