Churros are a delightful treat that bring a taste of carnival right to your kitchen. With their crispy exterior and soft, warm center, the delightful pastries are rolled in cinnamon sugar, making them irresistible for any dessert lover.

When preparing churros, you can substitute butter with margarine or use coconut oil for a different flavor. For those with gluten sensitivities, try using a gluten-free flour blend, though the texture may vary slightly. Always ensure your ingredients are fresh, especially the baking elements, to achieve the best results.

- 2 tablespoons butter
- 2 tablespoons vegetable shortening
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 cup white cornmeal
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- peanut oil (for frying)
Instructions
- In a shallow bowl, combine 1 cup granulated sugar and 2 teaspoons cinnamon; mix thoroughly and set aside to create cinnamon sugar.
- In a 3-quart saucepan, add 1 cup water, 2 tablespoons butter, 2 tablespoons vegetable shortening, 1 tablespoon sugar, and 1/2 teaspoon salt; bring to a rolling boil.
- Once boiling, remove from heat and stir in 1/2 cup white cornmeal and 1/2 cup all-purpose flour all at once until well combined.
- Return the mixture to low heat, stirring vigorously with a spoon until a ball forms, then remove from heat.
- Place the warm dough in a mixing bowl and add 2 large beaten eggs; blend until the mixture is smooth and shiny.
- In a deep skillet or Dutch oven, pour in enough peanut oil to have about 3 inches of depth and heat it to 375 degrees Fahrenheit.
- Fit a pastry bag with a large star tip (size #5 is preferred) and fill it with the dough.
- Pipe 8-inch strips of dough into the hot oil, frying them on both sides until they are browned and crisp, usually around 2-3 minutes per side.
