- 3 (8 ounce) packages cream cheese, room temperature
- 1 cup sugar
- 1 teaspoon vanilla
- 3 large eggs
- 1 cup graham cracker crumbs
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/2 cup butter, melted
- 2 tablespoons butter, melted
- 1/2 teaspoon vanilla
- 3/4 cup powdered sugar
- 3 teaspoons milk
Instructions
- Preheat the oven to 350 degrees.
- To create the crust, combine 1 3/4 cups graham cracker crumbs and 1/2 cup sugar in a bowl. Add 1/2 cup melted butter and mix well with a fork.
- Press the mixture into the bottom and slightly up the sides of a 9-inch springform pan. Bake in the oven for about 8 minutes until set.
- Next, prepare the streusel. In a large bowl, mix 1 cup graham cracker crumbs, 1/2 cup brown sugar, and 1/2 teaspoon cinnamon. Stir in 1/2 cup melted butter until well combined.
- In a medium bowl, beat together 3 packages (8 ounces each) of room temperature cream cheese and 1 cup sugar until smooth. Add 1 teaspoon vanilla and mix well.
- Add 3 large eggs one at a time, beating well after each addition. Be sure to scrape down the sides of the bowl with a spoon or spatula to incorporate all ingredients.
- Pour half of the cheesecake mixture over the crust. Top with half of the streusel mixture.
- Layer on the remaining cheesecake batter, followed by the rest of the streusel on top.
- Place the springform pan on a baking sheet and position it on the middle rack of the oven. Bake for about 50-60 minutes, until set.
- Allow the cheesecake to cool completely in the fridge before adding the topping.
- For the topping, mix 2 tablespoons melted butter, 1/2 teaspoon vanilla, and 3/4 cup powdered sugar. Add small amounts of milk as necessary to achieve a drizzle-able consistency.
- Transfer the topping into a piping bag or a ziploc bag with a small corner cut out. Drizzle or pipe over the cheesecake in a criss-cross pattern before serving.
