For those who need to make substitutions, all-purpose flour can often be swapped with a gluten-free blend to accommodate dietary restrictions. Instead of buttermilk, a mixture of milk and vinegar can create a similar tangy flavor if necessary. When it comes to sweeteners, feel free to use coconut sugar or a sugar alternative for a healthier twist. Always ensure that dairy products like butter and cream cheese are used fresh to avoid any off flavors in your delicious creations.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2 cups buttermilk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, melted
  • 3/4 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 4 tablespoons butter
  • 2 ounces cream cheese
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together 1 3/4 cups of flour, 2 tablespoons of sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.
  2. Make a well in the center of the mixture and set it aside.
  3. In a separate bowl, whisk together 2 large eggs, 2 cups of buttermilk, 1/4 cup of vegetable oil, and 1 teaspoon of vanilla extract.
  4. Pour the wet ingredients into the bowl with the dry ingredients and stir just until moistened; the batter should be slightly lumpy.
  5. Preheat your waffle iron and spray it with nonstick spray to keep waffles from sticking.
  6. Pour an appropriate amount of batter into the waffle iron grid and close the lid. Bake according to the waffle iron’s instructions until the waffles are completely done.
  7. Use a fork to carefully remove the finished waffles and keep them warm in a 200-degree oven while repeating with the remaining batter.
  8. To prepare the cinnamon topping, mix together 1/2 cup of melted butter, 3/4 cup of packed brown sugar, and 1 tablespoon of ground cinnamon in a medium bowl.
  9. Scoop the cinnamon filling into a small zip bag and set it aside for later use.
  10. For the cream cheese topping, heat 4 tablespoons of butter and 2 ounces of cream cheese in a medium, microwave-safe bowl for 30 to 60 seconds until melted. Stir together until smooth, then whisk in 3/4 cup of powdered sugar and 1/2 teaspoon of vanilla extract.
  11. When ready to serve, place a waffle on a plate, drizzle with the cinnamon topping, then drizzle with the cream cheese topping to taste. Serve immediately.
