For the rice paper, if you’re using a silpat, you can skip it altogether. Ground almonds should be finely processed for the best texture, so check for quality. If you’re allergic to nuts, consider using sunflower seed flour. The coffee extract can be substituted with instant coffee if you’re in a pinch, just mix one teaspoon with one tablespoon of hot water for a quick fix.

Ingredients

  • rice paper (you know, those wrappers for fresh spring rolls. If you cook on silpat not needed)
  • 4 ounces ground almonds
  • 6 ounces sugar
  • 2 egg whites
  • 1 tablespoon cornstarch
  • 1/4 teaspoon vanilla
  • 1 tablespoon coffee extract (if you do not have make with 1 tsp instant coffee and 1 tbs hot water)
  • 12 chocolate-covered coffee beans, to garnish

Instructions

  1. Line 2 or 3 baking trays with rice paper or a silpat mat.
  2. Preheat the oven to 375 F.
  3. In a mixing bowl, combine 4 ounces of ground almonds, 6 ounces of sugar, and 1 tablespoon of egg whites (save the rest for later). Stir until the mixture is evenly blended.
  4. Add 1 tablespoon of cornstarch, 1/4 teaspoon of vanilla, and 1 tablespoon of coffee extract to the almond mixture. Stir again until well combined.
  5. Spoon the batter into a piping or pastry bag fitted with a 1/2 inch plain nozzle. Pipe large circles onto the baking trays. If piping sounds too intimidating, you can also spoon the batter into neat dollops on the trays.
  6. Optional: Top each macaroon with a chocolate-covered coffee bean for an extra treat.
  7. Bake the macaroons for about 15 minutes or until they are lightly browned, risen, and slightly cracked on top.
  8. If you used rice paper, cut it to fit each macaroon and leave them to cool on a wire rack.
