When making the Cornstarch Custard Pudding, consider using whole milk for a richer taste, or a dairy-free alternative if lactose is a concern. For those watching their sugar intake, a sugar substitute can work, but make sure it’s suitable for cooking. Always check labels for allergens, especially with the eggs and any alternative ingredients.

Ingredients

  • 1/2 cup sugar
  • 1/3 cup cornstarch
  • 1/2 teaspoon salt
  • 4 cups milk
  • 2 eggs
  • 1 teaspoon vanilla

Instructions

  1. In a double boiler, mix together 1/2 cup sugar, 1/3 cup cornstarch, and 1/2 teaspoon salt until well combined.
  2. Gradually stir in 4 cups of milk, ensuring everything is mixed thoroughly.
  3. Place the mixture over boiling water and stir constantly for about 12 minutes, or until it starts to thicken.
  4. Cover the boiler and let the mixture cook for an additional ten minutes without stirring.
  5. In a separate bowl, beat 2 eggs with an electric beater until they are frothy.
  6. To temper the eggs, stir in 1/2 cup of the cooked mixture into the beaten eggs very gradually while continuing to beat. Repeat the process two more times, adding in the cooked mixture slowly to avoid scrambling the eggs.
  7. Once combined, stir everything well and cook for 2 more minutes for a perfect consistency.
  8. Remove the pudding from heat and let it cool slightly before gently stirring in 1 teaspoon of vanilla.
