Cranberry Pistachio Shortbread Cookies - the Dancing Deer Bakery recipe

When making Cranberry Pistachio Shortbread Cookies, opting for high-quality unsalted butter can make a significant difference in flavor. If you’re looking for alternatives, coconut oil could work for a dairy-free version, though the texture may vary. Be mindful of any nut allergies if you plan to share the cookies, as the pistachios are a key ingredient.

Ingredients

  • 2 cups unbleached all-purpose flour
  • 1/2 teaspoon kosher salt
  • 5/8 cup unsalted butter
  • 2/3 cup sugar
  • 1 egg
  • 2 – 4 tablespoons chopped dried cranberries (to taste)
  • 2 – 4 tablespoons coarsely chopped pistachios (to taste)

Instructions

  1. In a small bowl, combine 2 cups of unbleached all-purpose flour and 1/2 teaspoon of kosher salt, stirring together with a fork until blended. Set aside.
  2. Using an electric mixer, combine 5/8 cup of unsalted butter and 2/3 cup of sugar, beating until just blended for about 1-2 minutes. Add 1 egg and continue to beat until blended for about 1 minute more.
  3. Add the flour mixture and on low speed, beat until the mixture just begins to form a sticky dough, which should take about 1 minute more. Turn the dough out onto a floured surface and gently pat it together to form a dense ball.
  4. Incorporate 2 – 4 tablespoons of chopped dried cranberries and 2 – 4 tablespoons of coarsely chopped pistachios into the dough, kneading gently until evenly combined. Shape the dough into a flat round disk.
  5. Wrap the disk tightly with plastic wrap and chill in the refrigerator for at least 2 hours.
  6. Position a rack in the center of the oven and preheat to 325°F.
  7. On a lightly floured surface, roll the chilled dough out to about 1/8 inch thick and cut it into desired shapes. Transfer the cut cookies to a heavy-duty cookie sheet.
  8. Bake the cookies in the preheated oven until just golden around the edges, which should take about 15-18 minutes.
