When it comes to substitutions, you can easily opt for regular milk instead of buttermilk, but keep in mind that buttermilk adds a delicious tanginess and helps achieve that perfect crispiness. If you’re watching out for allergies, ensure your flour is gluten-free if needed, and you can swap in margarine for the butter if dairy is a concern. Sourcing quality ingredients, such as fresh eggs and real vanilla extract, can really enhance the taste of your waffles.

Servings4
Serving Size1 (163 g)

Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons instant yeast
  • 1/2 cup melted butter
  • 2 cups warm milk (heated to about 110 degrees) or 2 cups buttermilk (heated to about 110 degrees)
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

Instructions

  1. Prepare the batter and refrigerate for at least 8 hours before baking, which could mean all day for dinner or overnight for breakfast.
  2. In a large bowl, combine and whisk together the dry ingredients: 2 cups flour, 1 1/2 teaspoons instant yeast, 1 tablespoon sugar, and 1/2 teaspoon salt.
  3. In another bowl, combine 1/2 cup melted butter with 2 cups warm milk (heated to about 110 degrees) or 2 cups buttermilk (also heated to about 110 degrees).
  4. Add the butter-milk mixture to the dry ingredients and stir gently until just combined.
  5. In a separate small bowl, whisk together 2 eggs and 2 teaspoons vanilla extract before adding it to the batter, mixing until everything is well combined.
  6. Cover the bowl with plastic wrap and place it in the refrigerator until you’re ready to cook.
  7. When you’re ready to make the waffles, prepare your waffle iron as usual.
  8. Stir the batter to deflate it; it should have a puffy and frothy appearance.
  9. Pour the batter into the waffle iron, keeping in mind that the batter will rise more than batters made with baking powder.
  10. Cook according to your waffle iron’s instructions, and enjoy 4-6 large round waffles fresh and crispy.
