When preparing the muffins, consider that firm silken tofu is a wonderful substitute for dairy, adding moisture and protein without compromising flavor. For those with gluten sensitivities, a gluten-free flour blend can replace the bread and whole wheat flours. Be sure to choose honey that aligns with your dietary needs, and for vegan options, substitute eggs with flaxseed meal or chia seeds mixed with water.

Ingredients

  • 1/3 cup firm silken tofu
  • 2/3 cup old fashioned oats
  • 1 1/4 cups mashed bananas
  • 2 tablespoons applesauce
  • 2 tablespoons Earth Balance natural buttery spread, melted
  • 2 eggs, beaten
  • 1/2 cup honey
  • 1 cup bread flour
  • 3/4 cup white whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a bowl, mix together 1/3 cup firm silken tofu and 2/3 cup old fashioned oats, letting it sit for 20 to 30 minutes to allow the oats to soften.
  3. In a second bowl, combine 1 1/4 cups mashed bananas, 2 tablespoons applesauce, 2 tablespoons melted Earth Balance natural buttery spread, and 2 beaten eggs.
  4. In a third bowl, whisk together 1 cup bread flour, 3/4 cup white whole wheat flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon baking soda, and 1/4 teaspoon salt.
  5. Add the liquid mixture to the tofu and oats and stir until combined. Then, pour the mixture onto the dry ingredients, stirring just until moistened.
  6. Oil muffin pans with cooking spray; silicone muffin pans sprayed with olive oil work wonderfully for easy removal.
  7. Fill each muffin section with 1/4 to 2/3 cup batter, ensuring an even fill for uniform baking.
  8. Bake in the preheated oven for approximately 30 minutes or until a toothpick inserted in the center of the muffins comes out clean.
