Date Pinwheel Cookies offer a delightful twist on traditional cookies, featuring a sweet date filling wrapped in a buttery dough. The cookies are perfect for sharing with family and friends, bringing a touch of nostalgia to your dessert table.

When making Date Pinwheel Cookies, consider using unsalted butter instead of shortening for a richer flavor. If you need to avoid nuts, the can easily be omitted or replaced with seeds for a different crunch. Fresh dates are often preferred for their sweetness; however, dried dates also work well and can be found in many grocery stores. Ensure your ingredients are fresh for the best results.

Date Pinwheel Cookies Recipe
Ingredients
- 1 cup shortening
- 1 cup brown sugar
- 1 cup white sugar
- 3 eggs
- 1 teaspoon vanilla
- 4 cups flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 lb dates
- 1/2 cup sugar
- 1/4 cup water (or more)
- 1 cup nuts, chopped
Instructions
- In a large mixing bowl, combine 1 cup shortening, 1 cup brown sugar, 1 cup white sugar, and 3 eggs. Beat until smooth. Stir in 1 teaspoon vanilla. In another bowl, whisk together 4 cups flour, 1/4 teaspoon salt, and 1 teaspoon baking soda. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- On a floured surface, roll out the dough to about 1/2 inch thick. Prepare the filling by combining 1 lb dates, 1/2 cup sugar, and 1/4 cup water (add more water if necessary). Cook over medium heat until the mixture is hot, then let cool.
- Spread the cooled filling evenly over the rolled-out dough, resembling a jelly roll. Carefully roll the dough up tightly and wrap it in plastic wrap. Refrigerate overnight to firm up the log.
- Preheat your oven to 350 degrees F. Slice the chilled dough into 1/4 inch thick rounds and place them on a lined baking sheet. Bake for about 12 minutes, or until the edges are golden brown.
