If you’re looking for a delightful breakfast option, the Dutch Apple Pancake (Vegan) is an ideal choice. The fluffy pancake, loaded with tart apple goodness, is sure to make your mornings brighter and more delicious. With a few simple ingredients, you can enjoy a tasty vegan treat that everyone will love.

When making the Dutch Apple Pancake, feel free to substitute the Earth Balance margarine with another vegan butter if preferred. For the apples, Granny Smith adds a lovely tartness that balances the sweetness, but any similar variety will work just fine. If you’re looking to reduce sugar, consider using less agave or opting for a sugar substitute. Lastly, ensure your non-dairy milk is unsweetened to control the sweetness of the pancake.

Dutch Apple Pancake (Vegan) Recipe
Ingredients
- 2 tablespoons Earth Balance margarine (divided in half)
- 1 medium tart apple (granny smith or other tart apple-cut in 1 inch cubes)
- 1/3 cup whole wheat pastry flour
- 2 tablespoons raw sugar
- 1 tablespoon agave nectar (or other sugar substitute)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 cup non-dairy milk substitute
- 2 medium bananas (or other egg substitute to equal 4 eggs)
Instructions
- Preheat your oven to 400°F.
- In a 10-inch cast iron skillet, heat 1 tablespoon of the Earth Balance margarine over medium heat.
- Add the cubed apple to the skillet and sauté for about 5 minutes, until they’re golden and slightly caramelized. The skin on the apples can stay for added fiber, if that’s your thing.
- In a blender, combine the remaining 1 tablespoon of margarine, 1/3 cup whole wheat pastry flour, 2 tablespoons raw sugar, 1 tablespoon agave nectar, 1/2 teaspoon cinnamon, 1/4 teaspoon ground nutmeg, 3/4 cup non-dairy milk, and 2 medium bananas. Blend until just combined, about 1 minute.
- Pour the blended mixture over the sautéed apples in the skillet.
- Carefully place the skillet in the preheated oven and bake for about 15 minutes, or until the pancake is set and puffed up.
- Once baked, serve the pancake hot. Enjoy your delicious creation.
