For those who may have dietary restrictions or preferences, feel free to swap out all-purpose flour for a gluten-free blend. Almond milk can be a great dairy alternative for those avoiding cow’s milk, and coconut oil works nicely in place of vegetable oil. Always check ingredient labels for allergens if necessary, especially in the yeast and sugar.

Ingredients

  • 1 1/2 cups flour
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 4 teaspoons active dry yeast
  • 2/3 cup milk (110-115 degrees)
  • 3 tablespoons vegetable oil
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2 tablespoons butter, room temperature
  • 2/3 cup brown sugar
  • 3/4 teaspoon cinnamon
  • 1 cup powdered sugar
  • 1-2 tablespoon milk

Instructions

  1. Combine 1 1/2 cups flour, 1/3 cup sugar, and 1/4 teaspoon salt in a mixing bowl.
  2. Dissolve 4 teaspoons active dry yeast in 2/3 cup milk at 110-115 degrees, then add to the dry ingredients along with 3 tablespoons vegetable oil, 1 egg, and 1/2 teaspoon vanilla.
  3. Stir the mixture until smooth and well combined.
  4. Divide the batter evenly into greased muffin wells, using about 1 1/2 tablespoons of dough per muffin, being careful not to overfill since they will rise.
  5. Allow the dough to rest in the pan for 15 minutes.
  6. While the dough rests, prepare the filling by mixing together 2 tablespoons room temperature butter, 2/3 cup brown sugar, and 3/4 teaspoon cinnamon in a small bowl.
  7. Sprinkle the filling on top of the dough, swirling it through with a knife or pressing it into the batter with your fingers.
  8. After the resting period, place the muffin pan into a cold oven, then set the temperature to 350 degrees and the timer to 20 minutes.
  9. As the oven preheats, the muffins will continue to rise. They are done when they spring back lightly when touched at the end of the baking time.
  10. Remove the muffins from the oven and let them cool for at least 30 minutes before glazing with a mixture of 1 cup powdered sugar and 1-2 tablespoons milk.
  11. If you’re worried about drips from the filling bubbling over, place a cookie sheet in the oven under the muffin pan.
