When it comes to ingredient substitutions, feel free to switch out the Egg Beaters for real eggs if that suits your fancy, though the egg substitute works wonders for a lighter texture. Applesauce can be replaced with plain yogurt for creaminess, and if you’re nut-free, just omit the walnuts or toss in some chocolate chips instead. Always best to use high-quality ingredients for maximum flavor, and check labels to ensure everything is allergy-friendly.

Serving Size1 (90 g)

Ingredients

  • 3/4 cup Egg Beaters egg substitute
  • 1/2 cup unsweetened applesauce
  • 1/2 cup canola oil
  • 1 cup sugar
  • 3/4 cup Kashi Golean Crunch cereal
  • 1/4 cup Fiber One cereal
  • 1 teaspoon vanilla
  • 1/4 cup water
  • 8 ounces low-fat cream cheese
  • 2 cups King Arthur white whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 large bananas, smashed
  • 1 1/4 cups walnuts, chopped

Instructions

  1. Preheat your oven to 350°F and spray two large loaf pans with Pam for Baking to prevent any sticky situations.
  2. In a mixing bowl, combine 3/4 cup Egg Beaters, 1/2 cup unsweetened applesauce, 1 cup sugar, 1/2 cup canola oil, 3/4 cup Kashi Golean Crunch cereal, 1/4 cup Fiber One cereal, 1 teaspoon vanilla, and 1/4 cup water. Mix on low speed for about 3 minutes, then let it rest for a couple of minutes to let the flavors mingle.
  3. Next, beat in 8 ounces of low-fat cream cheese on low speed until everything is well blended.
  4. In a medium bowl, whisk together 2 cups King Arthur white whole wheat flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon cinnamon, and 1/2 teaspoon nutmeg until evenly combined.
  5. Slowly add the flour mixture to the egg mixture on low speed, mixing just until combined. Then, fold in 2 large smashed bananas and 1 1/4 cups chopped walnuts, mixing until just combined—overmixing is a big no-no here.
  6. Pour the luscious batter into your prepared loaf pans and bake at 350°F for 60 minutes, or until a toothpick inserted into the center comes out clean. You want it perfectly baked, not a moment too long or short.
  7. Once baked, let the loaves cool on a wire rack before slicing and indulging.
