When considering substitutions, feel free to swap margarine for butter based on your preference or dietary needs. For the Jello flavor, any variety can work, but citrus flavors often add a refreshing zing. Ensure your evaporated milk is very cold for the best whipping results, and if you are lactose intolerant, a non-dairy whipped topping could be a fun alternative.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup melted margarine or 1/2 cup butter
  • 1 (6 ounce) package Jello gelatin, any flavor (lemon, lime, strawberry or raspberry are good)
  • 1 3/4 cups hot water
  • 1 cup sugar
  • 1 (12 ounce) can evaporated milk, chilled until very cold

Instructions

  1. Preheat your oven and butter a 9 x 13 x 2 inch pan. Combine 1 1/2 cups graham cracker crumbs, 1/2 cup sugar, and 1/2 cup melted margarine or butter in a bowl until mixed well. Press the mixture firmly onto the bottom and slightly up the sides of the prepared pan.
  2. In another bowl, mix 1 (6 ounce) package of Jello gelatin with 1 3/4 cups hot water and 1 cup sugar. Stir until everything is dissolved. Chill the mixture until it thickens but isn’t too stiff, which should take about 30 minutes.
  3. While waiting, take 1 (12 ounce) can of chilled evaporated milk and whip it until it reaches the consistency of whipped cream. The step is crucial for that fluffy texture you want.
  4. Once the Jello mixture is ready, gently fold the whipped evaporated milk into it until combined. Be careful not to deflate the mixture too much; we want airy goodness here.
  5. Pour the Jello mixture over the graham cracker crust in the pan. Spread it evenly and then pop it into the refrigerator until it sets firm, usually about 4 hours or overnight if you can resist.
  6. When ready to serve, garnish with extra graham crumbs for that extra touch and texture.
