German Apple Pancake With Creme Fraiche Recipe
Ingredients
- 7 large eggs
- 1 tablespoon pure vanilla extract
- 3/4 cup sugar
- 1/2 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 2 tablespoons unsalted butter
- 3 golden delicious apples, peeled, cored and cut into 1/2-inch wedges
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 tablespoons sugar
- 1 tablespoon confectioners’ sugar
- 1/4 cup creme fraiche
- 1 cup strawberry, for garnish
Instructions
- Preheat your broiler to high.
- For the batter, in a blender or food processor, combine 7 large eggs, 1 tablespoon pure vanilla extract, and 3/4 cup sugar. Blend for about 15 seconds until well mixed.
- Add 1/2 cup all-purpose flour and 1 1/2 teaspoons baking powder to the blender, and mix for 60 seconds more, or until the batter is very smooth. Set the batter aside for later.
- Heat a 12-inch nonstick skillet over medium heat and melt 2 tablespoons unsalted butter.
- Add 3 golden delicious apples, peeled, cored, and cut into 1/2-inch wedges, to the skillet and cook until softened, about 4 to 5 minutes.
- Sprinkle 1 1/2 teaspoons ground cinnamon and 1 1/2 tablespoons sugar evenly over the apples, cooking and stirring until the apples are glazed and slightly translucent at the edges, which should take about 2 minutes.
- Distribute the glazed apples evenly in the skillet and pour the prepared batter over them.
- Cook until the bottom seems quite firm, approximately 8 minutes.
- Transfer the skillet to the broiler, keeping a close eye on it, and cook until the pancake is firm throughout and golden on top.
- Cut the pancake into 4 wedges and place them, apple side up, onto serving plates. Sprinkle with 1 tablespoon confectioners’ sugar, add a dollop of 1/4 cup crème fraiche on top, and garnish with 1 cup strawberries.
