Serving Size1 (87 g)

Ingredients

  • 1 cup all-purpose gluten-free flour
  • 1/2 cup cornmeal
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon thyme leaves
  • 1/4 teaspoon sage
  • 1/2-1 cup grated cheddar cheese
  • 2 eggs, lightly beaten
  • 1/4 cup olive oil
  • 1 cup milk
  • 1 cup whole kernel corn

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Place a 9-inch square or 10-inch round baking pan in the oven to preheat. Stoneware or cast iron will create a marvelous crust, but glass or metal pans are just fine, too.
  3. In a bowl, sift together 1 cup of gluten-free flour, 1/2 cup cornmeal, 1 tablespoon baking powder, and 1/2 teaspoon salt. Stir in 1/2 teaspoon thyme leaves and 1/4 teaspoon sage, along with the grated cheese.
  4. In another bowl, whisk together 2 eggs and 1/4 cup olive oil. Then, stir in 1 cup of milk and 1 cup of whole kernel corn, making sure to drain any liquid if using canned corn.
  5. Carefully stir the dry ingredients into the wet mixture to create a smooth batter.
  6. Once the pan is preheated, remove it from the oven. Add a bit of oil or butter to the hot pan, then use a pastry brush or tilt the pan to coat the bottom evenly.
  7. Pour the batter into the prepared pan and bake for about 20 minutes, or until a toothpick inserted in the center comes out clean.
