When it comes to substitutions, you can swap out the hazelnuts for other types of nut flour if allergies are a concern. For a dairy-free version, ensure that the chocolate used is dairy-free. Sourcing high-quality ingredients makes a difference, particularly with the chocolate and coffee; consider using organic options for better flavor.

Ingredients

  • 4 egg whites
  • 150 g sugar
  • 1 teaspoon vanilla
  • 2 teaspoons instant coffee
  • 250 g ground hazelnuts
  • 75 g dark chocolate
  • 100 g caster sugar
  • 3 tablespoons rum

Instructions

  1. Preheat the oven to 300 degrees Fahrenheit (or 280 degrees when using a fan-assisted oven).
  2. Finely chop or grind the 75 g of dark chocolate until it’s nice and small.
  3. In a mixing bowl, beat the 4 egg whites until they form stiff peaks; if you cut through the mixture, the cut should remain visible.
  4. Gradually beat in the 150 g of sugar, 1 teaspoon of vanilla, and 2 teaspoons of instant coffee until well combined.
  5. Gently fold in the 250 g of ground hazelnuts, and then carefully fold in the ground chocolate. Be cautious not to overmix, as that could lead to a collapsed batter.
  6. Using two teaspoons, drop little heaps of the batter onto a parchment-lined cookie sheet, spacing them out as needed.
  7. Bake for approximately 25 minutes until they are lightly golden.
  8. While the macaroons are baking, stir a little hot water into the 100 g of caster sugar, then add the 3 tablespoons of rum, mixing until smooth.
  9. Once baked, carefully lift the parchment with the hot macaroons off the cookie sheet, brush with the rum glaze, and allow them to cool on a wire rack.
  10. Only store the cooled macaroons in an airtight container after they have completely cooled.
