Gold Medal Biscuits are a delightful treat that anyone can whip up in no time. With just a few simple ingredients, you can create buttery, sweet biscuits that are perfect for any occasion.

When it comes to making the biscuits, feel free to swap out the self-raising flour for all-purpose flour, just remember to add additional baking powder. If you’re short on honey, a mix of light syrup or brown sugar can work in a pinch. For those with allergies, consider dairy-free alternatives for the butter, and always check ingredient labels to avoid any hidden allergens.

Gold Medal Biscuits Recipe
Ingredients
- 2 cups self-raising flour
- 1 teaspoon bicarbonate of soda
- 1 teaspoon mixed spice
- 2 teaspoons ground ginger
- 1/4 cup caster sugar
- 125 g butter, chopped into small pieces
- 1/2 cup honey
- 1/4 cup demerara sugar
Instructions
- Set the oven to 200C (400F).
- Grease two baking trays or line them with baking (silicone) paper.
- Sift all the dry ingredients—2 cups self-raising flour, 1 teaspoon bicarbonate of soda, 1 teaspoon mixed spice, 2 teaspoons ground ginger, and 1/4 cup caster sugar—into a small mixing bowl.
- Using clean fingers, rub 125 g chopped butter into the dry ingredients until the mixture resembles fine breadcrumbs. If you have a food processor, you can process the flour mixture and butter together for a quicker approach.
- Melt 1/2 cup honey in the microwave or in a small saucepan until warm, but not boiling.
- While the honey is still warm, pour it into the flour mixture and mix thoroughly to form a dough.
- Pour 1/4 cup demerara sugar onto a saucer.
- Take spoonfuls of the dough and roll them into balls about 4 cm (1 1/2 inches) in diameter.
- Roll each ball in the demerara sugar before placing them about 5 cm apart on the baking trays, as the biscuits will spread and flatten during baking.
- Bake on the center shelves of the oven for 8-10 minutes or until golden brown.
- When cooked, remove the trays from the oven and wait until the biscuits are firm before transferring them to wire racks to cool thoroughly.
- Store the biscuits in an airtight container.
