For those looking to substitute, coconut oil can work in place of canola oil, adding a subtle coconut flavor. If you’re nut-free, simply omit the chopped nuts or use seeds instead. Make sure your bananas are overripe for optimal sweetness and moisture. If gluten is a concern, a gluten-free flour blend can be a good alternative, but results may vary.

Ingredients

  • 1/4 cup sugar
  • 1/4 cup sucanat
  • 1/4 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons ground flax seeds
  • 6 tablespoons water
  • 3 overripe bananas, peeled
  • 1 teaspoon baking soda
  • 1 1/2 cups flour (I use a 1/2 cup of all purpose and 1 cup fresh ground whole wheat)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a small bowl, mix together 2 tablespoons of ground flax seeds and 6 tablespoons of water. Let it sit to thicken while you prepare the other ingredients.
  3. In a mixing bowl, beat together 1/4 cup sugar, 1/4 cup sucanat, 1/4 cup canola oil, and 1/4 cup unsweetened applesauce on medium speed until well combined.
  4. Add the flax seed and water mixture to the bowl and continue to beat for a little longer until incorporated.
  5. Peel and mash 3 overripe bananas, then add them to the wet mixture. Beat until the bananas are fully integrated with the other ingredients.
  6. Stop the mixer and add in 1 1/2 cups flour (using a mix of 1/2 cup all-purpose and 1 cup fresh ground whole wheat), 1 teaspoon baking soda, 1/4 teaspoon salt, and 1 teaspoon vanilla extract.
  7. Mix the ingredients together just until everything is wet; be careful not to overmix, as the can make the bread tough by developing gluten.
  8. If using, gently fold in 1/2 cup of chopped nuts with a spatula.
  9. Pour the batter into a greased loaf pan, spreading it evenly.
  10. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
