When preparing Grandma’s Banana Pudding, feel free to substitute the vanilla wafers with other cookie options if you’re feeling adventurous, just remember that classic wafers give that nostalgic crunch. For those with egg allergies, you could experiment with egg substitutes, although the meringue may not turn out quite the same. Always opt for ripe bananas for the sweetest flavor, and ensure your milk is fresh for the best results.

Serving Size1 (127 g)

Ingredients

  • 6 ripe bananas
  • 3 1/2 tablespoons all-purpose flour
  • 1 1/3 cups sugar
  • 1 dash salt
  • 3 large eggs, separated
  • 3 cups milk
  • 1 (12 ounce) package vanilla wafers
  • 1/4 cup sugar
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a heavy saucepan, combine 3 1/2 tablespoons all-purpose flour, 1 1/3 cups sugar, and a dash of salt.
  2. In a separate bowl, beat the 3 large egg yolks. Combine the egg yolks with 3 cups milk, mixing well before adding to the dry ingredients.
  3. Cook over medium heat, stirring constantly, until the mixture is smooth and thickened. Remove from heat.
  4. Stir in 1 teaspoon vanilla extract into the custard.
  5. In a 3-quart baking dish, layer one-third of the vanilla wafers on the bottom. Slice 6 ripe bananas and layer them over the wafers. Pour one-third of the custard over the bananas. Repeat the layers twice more, finishing with the custard on top.
  6. In a clean bowl, beat the 3 large egg whites until foamy. Gradually add 1/4 cup plus 2 tablespoons sugar, one tablespoon at a time, beating until stiff peaks form.
  7. Add 1 teaspoon vanilla extract to the meringue and beat until blended.
  8. Spread the meringue over the custard, sealing the edges of the dish to prevent it from shrinking during baking.
  9. Bake in a preheated oven at 425 degrees Fahrenheit for 10-12 minutes, or until the meringue is golden brown.
